Vinification
Partial destemming followed by a 25 to 30 days maceration and temperature-controlled fermentation between 25 and 28°C. A maturation in vat enable to produce a well-balanced, full-bodied fruity wine.
Tasting notes
Deep ruby color with purple glints, spicy nose with aromas of camphor, liquorice and red fruits. Frank attack and harmonious structure on the palate with soft tannins. The long finish reveals nice flavors of black fruits, black olives and a hint of musk.
Pairing
This wine can perfectly accompany white and red meats, either braised, grilled or in sauce.
