Harvest is destemmed. Vating for 3 weeks. Pumping-over several times during the alcoholic fermentation. Temperatures are monitored to see if refrigeration is necessary at the start of
fermentation and to raise them smoothly and gradually during fermentation.
Eye: bright lively garnet red
Nose: powerful, aromas of spice and red fruit.
Mouth: soft attack, structured and mellowed, good long finish
This wine goes perfectly with grilled red and white meat, charcuterie, tarts, fresh pasta, Lasagne or Cannelloni and cheese.
