Harvest is destemmed. Vatingfor 3 weeks. Pumping-over several times during the alcoholic fermentation. Temperatures are monitored to see if refrigeration is necessary at the start of fermentation and to raise them smoothly and gradually during fermentation.
Eye: bright lively garnet red
Nose: powerful, aromas of spice and red fruit.
Mouth: soft attack, structured and mellowed, good long finish
It goes perfectly with casseroles, red or white meat, gratins, pasta with pesto sauce, unpasteurised or hard cheese.
